Hints:

  • Nut butters may be made in a grinder (food mill). Use the “worm feed” crusher, which is especially designed for oily substances.
  • Homemade nut butters should be made in small amounts, refrigerated in closed containers and used within a reasonable time.
  • Homemade nut butters should be made of fresh, raw, unsalted nuts.
  • Use as spreads, toppings for vegetables or desserts.
  • Nut butters may be thinned with water or milk and used as toppings over cereal or dessert.

HOMEMADE PEANUT BUTTER
Ingredients:
raw peanuts
oil

Grind a cupful of peanuts at a time. They should be the consistency of flour. Turn them into bowl. After grinding all peanuts, add only enough oil to blend mixture into thick paste. Salt and/or nutritional yeast may be added, if desired. Pack into container. Cover. Refrigerate.

Variations:
Homemade nut butter may be made from raw almonds, filberts, walnuts (English and black), cashews, Brazil nuts, etc. Most of these nuts have enough oil so that no extra oil need to added.

 

HOMEMADE PEANUT-SUNFLOWER SEED BUTTER
Ingredients:
1½ pounds raw peanuts
½ pound sunflower seeds, hulled
½ pound nutritional yeast
1 pint oil
1 tablespoon salt

Grind nuts and seeds. Blend in remaining ingredients. Pack into container. Cover. Refrigerate. Makes about 4½ cups.

NUT BUTTER SPREAD
Ingredients:
2 cups nuts
1 cup sunflower seeds, hulled
1 cup sesame seeds
oil
honey

Grind nuts and seeds. Blend in enough oil to make mixture into thick paste. Add honey to taste. Blend thoroughly. Pack into container. Cover. Refrigerate. Use as spread or roll into small balls and serve as dessert.

SPEEDY SPREAD
Ingredients:
¾ cup raw blanched almonds or 1 cup ground almonds
½ cup boiling water
1 jar (2-oz.) pimentos or 2½ whole pimentos
1 teaspoon onion salt
¼ teaspoon celery salt
pinch of ground cumin
2 tablespoons food yeast flakes
2½ tablespoons lemon juice
dash of garlic powder or garlic salt
pinch of caraway seed or dill

Whiz dry almonds in dry blender until ground. Add boiling water and let blender run about 4 minutes. Add a bit more boiling water if necessary for operating blender. Add pimentos and seasonings. Whiz until smooth. Add lemon juice. Whiz briefly. Refrigerate in covered container until used. Makes 1 ¾ cups.
